My favorite ice cream is mint chocolate chip so I am always down to try anything that is a chocolate + mint combo and I just made this smoothie from her new book, Body Love, and had to share...

1 serving vanilla protein powder

1 to tbsp MCT oil (or coconut oil) 

1 to 2 tbsp chia seeds

Fresh mint leaves

2 cups unsweetened nut milk

Cacao nibs, for garnish

Place all ingredients except the cacao nibs in a high-speed blender and blend to the desired consistency. Top with cacao nibs and enjoy!
