I’m all about healthy blogs that share recipes that will do my body some good + taste yummy. One of my go-to blogs is Nutrition Stripped.

I love McKel’s recipes… so I was pumped to find out that she’s putting out a cookbook. I’ve already pre-ordered mine on Amazon and if you’re into good-for-you recipes…then you might want to get a copy too!

If you’d like to try out a recipe from the cookbook, you’re in luck! I got my hands on one: Sweet Potato Julius!!! It’s so awesome. Try for yourself. Here you go:





1 cup almond milk

1 medium sweet potato, baked whole

1 medium orange, peeled

1 Medjool date, or to taste, pitted

1 teaspoon pure vanilla extract

Dash of sea salt

Dash of ground cinnamon

Honey (optional)



In a high-speed blender, combine the almond milk, sweet potato, orange, date, vanilla, salt, and cinnamon and blend until smooth. Adjust the sweetness to your desired taste by adding honey or more Medjool dates.

Blend in about 1/2 cup ice to chill before serving.

Tip: This recipe offers the perfect example of how batch cooking comes in handy: Baking up a batch of sweet potatoes to have them ready for use in any application is such a time saver!
