AMY'S BLOG: Husband Approved Baked Buffalo Cauliflower Recipe + Arm Workout

Ok. So I said on Twitter last night that if my husband liked the healthy Buffalo Cauliflower I was making for dinner then I’d share the recipe. Well…HE LOVED IT. So here ya go!

What you need:

-1 head of cauliflower (rinsed + chopped)

-1 egg

-½  cup of potato starch (you will have some left in the bowl)

-4 tbsp. buffalo sauce (I like Tessemae’s or Franks

What you do:

-Pre-heat your oven to 450.

-Line baking sheet with parchment paper.

-Get 2 bowls…whisked egg in one bowl…potato starch in the other.

-Take some cauliflower. Dip it in the egg. Then dip it in the starch. Place on baking sheet. Repeat until done. 

-Bake 20 minutes.

-While they’re baking…pour buffalo sauce in a bowl…set aside.

-WANNA WORKOUT WHILE YOU WAIT?: Sometimes I kill time while cooking by doing quick little workouts in the kitchen…like this Tracy Anderson Arm one that Gwyneth Paltrow did every day while getting ready for Iron Man …its easy because no equipment needed…just your computer and your arms!!

-Ok. When timer goes off (keep oven on!!)…throw cauliflower in the bowl and toss until all pieces are coated with buffalo sauce. Definitely add more sauce if you need more than the 4 tbsp. :)

-Bake another 20 minutes.

-Eat. Enjoy. Feel good about your arms.
